But, is there anything to eat? Everyone who moves goes through it: What do we eat? Do we go out to eat? Pick something up? Cook? Do we even have anything to cook? I like to call this just part of the “moving season.” You are at the point in the packing process that you have reduced the amount of items in the fridge and probably started packing up the kitchen items. Here are a couple of my favorite recipes for this part of the move:

Chicken Casserole

What you need:

1 Can of Green Beans

1 Can of Corn

1 Can of Green Chilies

1 Can of Cream of Chicken (or cream of whatever really)

1 Cup of water (use the soup can for measurement)

1 package of boneless chicken breast or thighs (I have used bone-in at times, just not the same)

Seasoning: I like to just use Salt, Pepper, & Garlic Powder

Optional: You can add rice or pasta for that extra bit of goodness

Optional: If you have some cheese in the fridge, it makes for a nice topper during or after cooking.

I prefer to cook the chicken with the green chilies first in a skillet as its much faster to cook it this way. Once that is done, place all the above ingredients in a casserole dish, stir it up. Bake at 350 degrees for about 30-45 minutes or until everything is nice and hot! Add cheese to top about 10 minutes before pulling out of oven.

Tuna Salad

What you need:

2 Cans of Tuna

1 or 2 Hard Boiled Egg (if desired)

1 Can of Peas

1 Whole Pickle (cut up into small pieces)

Chunk of Cheese (break apart or cut into pieces)

1/4 Cup Chopped Onion

2 Tablespoons Mayo (or to taste)

Mustard (to taste)

Optional: Tomato and Avocado are nice additions if you have them lying around

Crackers/Bread/Lettuce (Really anything you prefer to pile up the tuna salad on)

Outside of the egg, nothing needs to be cooked. Mix the tuna, peas, pickle, cheese, onion with mayo and mustard in a bowl. Grab your crackers and enjoy!

For more ideas on what to eat during your moving process, check out these ideas for meals and snacks!

These are just a couple of my go-to meals when I am running low on groceries and need a quick, easy meal.
