I’ve been a vegetarian for almost 25 years and there is nothing worse than going to a BBQ and getting stuck with cheese and bread or a frozen vegan patty! So I started experimenting with different burger recipes that not only would I want to eat, but my meat-eating husband would enjoy too. Here’s one that gets two thumbs up all around!
The Vegan Soyrizo Burger
This creamy burger is made with a base of soyrizo and topped with fajita veggies and “creamy” chipotle ketchup! Here’s what you need:
Ingredients
The Burger
1 package soyrizo
½ jalapeno petite diced
¼ tsp chipotle seasoning
¼ tsp smoked paprika
1 tsp onion powder
1 tsp garlic salt
½ – ¾ cup of corn muffin mix (depends on how much liquid is in the soyrizo is selected)
1/3 cup black beans
1/3 cup corn
1 each Red, Orange and Yellow bell pepper
1 tbsp olive oil
½ onion
1 avocado
1 head Boston lettuce
“Creamy” Chipotle ketchup
½ cup tomato sauce
½ cup coconut cream (not milk)
½ tsp chipotle powder
1 tbsp mustard
1 tbsp agave nectar
Directions:
In a medium bowl mix together soyrizo, jalepeno, chipotle, paprika, onion powder, garlic salt, black beans and corn. Add corn muffin mix ¼ cup at a time until it reaches a consistency that you can form into patties.
Wrap patties in non-stick aluminum foil and grill for 10 minutes on each side until it’s crispy on the outside.
While patties are grilling, toss bell peppers and onion in olive oil and sauté in a grilling pan.
To make the ketchup, mix all ingredients and set aside. (Yep it’s that easy!)
*Tip: Use up the rest of the jalepeno, canned corn and black beans by making a salad on the side. Just add diced tomatoes, cilantro, rice vinegar, salt and pepper.
Top burger patties with sliced avocado, chipotle ketchup and fajita veggies. Wrap in lettuce, and enjoy! For more grilling recipes, follow our Pinterest board.
