Grilling season is upon us so fill up that propane tank , wipe the dust off your grill and get cooking! We asked U-Haul team members to submit their favorite grilling recipes and we picked some of our favorites. This recipe puts a tasty spin on grilled shrimp and was submitted by team member Kathy out of Melbourne, Florida! Here’s the recipe for marinated grilled shrimp:
Ingredients:
- 1 pound of 16-20 shrimp peeled and cleaned with tails on
- 6 large jalapenos seeded and cut into 1 inch pieces
- 6 nectarines, peaches, or plums cut into 1 inch pieces
- 2 bunches of cilantro chopped
- 3 tablespoons of olive oil
- 3/4 cups of Sprite
- Salt and pepper to taste
- 1 lime
How to Make:
Step 1: Combine all ingredients except the lime to marinate for at least 1 hour.
Step 2: Soak wood skewers in water for about 10 minutes.
Step 3: Skewer shrimp, peppers and fruit.
Step 4: Squeeze lime juice over skewers.
Step 5: Grill over medium heat for 8 minutes.
Step 6: It can be served with everything from rice to fresh fruit. Enjoy!
