Pack up your corn hole and fill up the propane tank because it’s game day! One of my favorite parts of football season is the accompanying tailgate parties. The atmosphere, the people, the food, everything! Normally my friends and I will grill some burgers, but what if we try something different?
Street Tacos Recipe
The idea of street tacos came from the streets of Mexico. People wanted to quickly make and sell tacos from a small cart equipped with only a grill. Because the intention was to cook outside, the recipe remained simple. So simple we can now cook them from our tailgate!
The following recipe comes from my mother who grew up in Mexico. As she doesn’t measure when cooking, I’ve added approximations to some, if not add to taste.
Ingredients For Marinade
- Beef (About 3 lbs)
- Orange juice (Half gallon)
- Salt (To taste)
- Pepper (To taste)
- 1 Light beer (This one is optional.)
Start by seasoning the meat with salt and pepper then let the meat soak in the orange juice and beer for about 30 minutes. If you want to skip this step, you can buy the meat at a Mexican butcher shop, where they will likely have the option to add their marinade. After the 30 minutes have gone by, you can throw the meat on the grill and cook to your liking. Once it’s done chop it up into strips and set it aside.
Toppings
The meat, however, is only half of the tacos. Now you need your tortillas and toppings. I recommend: small corn tortillas, guacamole, salsa, cucumbers, lime, cabbage and red onion. You can also put some green onions on a grill basket and eat them on the side if you want the full experience.
Now that you have your tacos ready you can relax and have some fun. Remember to represent your team as this is a tailgate. Wear your jersey proud and give your grill a jersey (grill cover), too!
