Vegetarian Snacks and Meals for Moving Day

Sep 29, 2014

Finding healthy and portable vegetarian snacks can be a struggle. Moving day requires lots of energy, so you can’t risk being hungry on the big day! Try out these vegetarian snacks on moving day (or meal prep them a couple of days beforehand) to give you a quick boost of energy.

Vegetarian Snacks

Apple and Peanut Butter

This might just be the easiest and quickest way to get a boost of natural energy! Cut up your apples the night beforehand and sprinkle a little lemon juice on them so they don’t go brown. Set them aside and baggies, and enjoy them the next day dipped in your favorite flavor or peanut butter or other nutty spread. Enjoy!

Health Bars

Lara Bars,  Clif bars, Square Bars – you name it! These health bars can be found at any local grocery store and come in many different flavors. When looking for a good bar, make sure it has plenty of protein (and not too much sugar!) to keep your energy consistent all day.

Toasted Sandwich

Spread avocado, hummus, and cucumbers on toasted bread for a delicious mid-day meal or snack. The avocado and hummus make the sandwich creamy, but the cucumbers and toast bring in the perfect crunchy balance. Make this sandwich the night before and pack it in a small ice chest to ensure freshness!

Chocolate Ginger Bites

For a sweeter pick-me-up, chocolate ginger bites are sweet and delicious. Made with cocoa, nuts, dried dates, and ginger, these bites are worth the 15 minute prep time! Simply place the ingredients in a food processor and roll the mix into one-inch balls. Get the full recipe here!

The possibilities for healthy vegetarian snacks on moving day are endless! You could even try making your own trail mix, or try pairing and veggie, nut, and fruit together!
