Meals for College Students: Protein Chex

If you’ve recently moved to college, you know that trying to eat healthy on campus is no easy task. Let’s be honest, finding decent meals for college students is nearly impossible! If you’re like me and want to avoid your school cafeteria as much as possible, our easy meals for college students, such as this Protein-Packed Chex, are just what you’ve been looking for. Trust me — this is the perfect dorm room snack, requiring nothing but a microwave.

Muddy Buddies are a classic sweet treat and are easy to make. For all of the gym aficionados out there, we modified the recipe a little bit to be health conscious and full of protein creating the Protein Packed Chex. Check out our recipe below!

Ingredients

  • 20 oz bag of dark chocolate
  • 1/2 cup of peanut butter
  • 4 cups of vanilla flavored Chex Cereal
  • 1 cup of vanilla protein powder
  • 2 tsp honey

Step 1: Combine the dark chocolate and peanut butter in a large microwave-safe bowl. Dark chocolate is not only delicious, but it is also full of antioxidants to add some nutrition to your snack. Peanut butter is also a great source of potassium, protein, and vitamin E so you don’t have to feel guilty about that perfect chocolate peanut butter combo.

Step 2: Microwave your bowl of dark chocolate and peanut butter. For the best results, microwave on 20 second intervals and stir until the mixture is fully melted. This usually takes about 1-2 minutes.

Step 3: Combine your Chex Cereal with the melted mixture of chocolate and peanut butter. I like to simply pour the Chex into the same large bowl I microwaved the mixture in. Chex is a rice based cereal so if you are trying to avoid gluten you can still enjoy this snack!

Step 4: Stir the Chex Cereal and chocolate peanut butter mixture until everything is evenly distributed and the Chex appear as fully coated as possible.

Step 5: Pour into a sealable container and toss with  1 cup of vanilla protein powder. If you have a microwave safe container with a lid, feel free to use the same container throughout the process and simply add the cup of protein powder in.

Step 6: For an extra touch of sweetness and another boost of antioxidants, drizzle some honey on top of your finished Protein Packed Chex!
